This is another of those easy chicken recipes that is perfect for grilling on a bbq or in the kitchen.

Prep and Cook Time: around 30 min.
(If you marinade chicken the night before).

Ingredients:

1 1/2 lb chicken breast, deboned and skin removed
2/3 cup plain yogurt
1 tablespoon fresh ginger, peeled, chopped
2 garlic cloves, crushed
2 tablespoons lemon juice
1 tablespoon ground coriander
1 teaspoon chili powder
2 tablespoons vegetable oil
salt and pepper to taste

Directions:

Rinse chicken and pat dry with paper towels, then cut into 3/4 inch cubes.
Thread chicken onto non-reactive barbecue skewers and set in shallow glass baking dish.
In a large bowl, whisk together the remaining ingredients.
Spoon marinade over chicken kabobs, being sure they are completely covered.
Cover with plastic wrap and marinade in refrigerator for anywhere from 5 to 8 hours.
Turn on or heat grill to medium-high.
Put kabobs on grill rack and grill for a total of 6 to 8 minutes.
Turn several times until all chicken has grill marks and is cooked through well.

Easy BBQ Chicken Recipe – Chicken Cutlets Grilled with Lemon Rosemary Sauce

This easy chicken recipe is perfect for grilling on a bbq or in the kitchen.

Prep and Cook Time: around 30 min.

Ingredients:

2/3 cup mayonnaise
zest of 1/2 lemon
1/4 cup fresh lemon juice
2 teaspoons chopped fresh rosemary
1 large garlic clove, crushed or grated

8 boneless and skinless chicken breast halves, pounded thin
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Directions:

Sauce:
Whisk together the first 5 ingredients and set aside.

Chicken:
Place a chicken breast half between heavy plastic wrap or inside a plastic food bag.
Lightly pound with the flat side of a meat mallet or the bottom of a small cast iron pan.
Pound lightly and work your way from the center to the edge until meat is about 1/2 inch thick.
Salt and pepper each chicken breast.
Lightly oil grill grate or rack and set grill temperature to medium-high.
When grill is up to temperature, arrange the chicken on the grill and bring the sauce out.
Cook for about 3 to 4 minutes or until you have nice grill marks on the chicken.
Flip and brush the cooked side with sauce, leaving the chicken on the grill for about 3 or 4 minutes more.
Flip and again brush the top with sauce and leave the chicken on the grill this time for about 1 or 2 minutes more.
Chicken should feel firm when squeezed with tongs.
Remove from grill and let sit for 3 or 4 minutes before cutting and serving.

Prep and Cook Time : 22 min.

Ingredients:

1 lb. hamburger
1 cup minced onion
1 egg
1/4 cup milk
1/4 cup bread crumbs
1 tsp. salt
1/4 tsp. pepper
2 tbl. cooking oil
2 (8 oz.) cans tomato sauce
1/2 cup brown sugar
2 tbl. vinegar
1 tsp. seasoned salt

Directions:

Combine first seven ingredients and shape into 12 meatballs.
Brown in oil in skillet, remove excess fat.
Combine tomato sauce, brown sugar, vinegar and seasoned salt.
Pour over meatballs.
Simmer over low heat 10-15 minutes, turning frequently until meatballs are well glazed.
Serve over rice or noodles.
